Alright – Here is my Paleo Shepherd’s Pie recipe. All measurements are not exact. I usually just wing it and keep tasting as I go!
*any ingredients with a star are not perfect paleo and not used in the challenge.
1 Package Lean Ground Beef
1 Package Lean Ground Turkey Breast
2 cups beef stock
2 cups vegetable stock
1/2 can coconut milk
2 onions diced
6 carrots diced
2 zucchini diced
1 tbsp dried thyme
1 tbsp dried oregano
1 tbsp garlic powder
5-6 bay leaves
Fresh ground pepper
* sea salt
* 10 good shakes of worchester sauce
* 4-6 tbsp hp sauce
1 head of cauliflower
Bake the yams ahead of time. Steam the cauliflower. In a large bowl mash the cauliflower and yams together.
Saute the onions and zucchini. Remove and place off to the side. Brown the ground beef and ground turkey. Remove fat. Add to pot the onions, zucchini, carrots and all remaining ingredients. Bring to a boil and stir frequently for 5 minutes. Pour mixture into a large, deep, baking dish or pan. (like the photo above)
Cover the top with Yam/Cauliflower mix.
Bake at 325 degrees for 1 hour, uncovered.
