Breakfast is one of the toughest meals for many Paleo followers.
It’s easy to pop a bagel in the toaster or grab an English muffin as you’re scurrying out the door in the morning, but without the option of bread — or your seven billionth hard boiled egg and apple combo — delicious, nutritious breakfast become a little more challenging.
That said, Popeye and I both believe that breakfast is the most important meal of the day. He actually gets lightheaded during an intense workout if he hasn’t eaten enough in the morning, and I just become irritated with chipmunks and rain and the colour of my shoe, and it’s really better for everyone if I’m pleasantly full by 10am.
And so I’ve come up with a lot of hearty, tasty breakfast meals. This one, made in part with leftover yams from the night before, is one of my favourites.
Breakfast for Two:
2 portobello mushrooms, gills in.
3 whole free range eggs
1/2 cup egg whites
1/2 cup pre-cooked yams. I diced them, but you could also smush them and just mix them right in.
1/4 cup chopped fresh green onion
pepper to taste
Cook the mushrooms in a bit of olive oil. Add a little garlic +pepper to taste if you like.
In another bowl, scramble the eggs, egg whites, yams and green onions. Scramble on medium heat for about 5-6 minutes.
Spoon scrambled eggs on top of mushrooms and you have a steamy, hearty, breakfast “sandwich”, without any bread bloat.
